Bean and Egg muffins

• 1.5 Cups of canned black beans, drained
• ½ Cup of red onion, sliced
• 1 Green or red bell pepper, diced
• 1 Jalapeno, seeded and diced
• 1 Cup of baby spinach leaves, torn into pieces
• 8 Eggs
• Salt and pepper to taste
• Preheat the oven to 350 degrees
• Spray a skillet with a zero calorie cooking spray
• Add the onions, peppers, and jalapeno. Cook for about 6 minutes
• In a large bowl, whisk together the eggs, salt, and pepper
• Add the beans, peppers and onions to the egg mixture
• Add in the spinach leaves and blend
• Spray a muffin tin with a zero calorie cooking spray
• Fill each muffin tin about ¾ full and bake for about 20-24 minutes

This actually made 10 muffins for me,
