• 2 lbs. boneless and skinless chicken breast
• 28 oz. canned diced tomatoes, half of liquid drained
• 1 sweet onion, sliced thin
• 4 garlic cloves, minced
• 3 tbsp. balsamic vinegar (plus more for serving)
• 1 tbsp. Italian seasoning
• 6 cups fresh spinach
• Salt and pepper
• Add the chicken to the slow cooker. Season with salt and pepper. Stir in the remaining ingredients except the spinach.
• Cook on low for 4 hours adding the spinach during the last 30 minutes of cooking.

Zero Point Spicy Chicken Chili
Crock Pot
• 2 lbs 99% lean ground chicken
• 1 red pepper, diced
• 1 green pepper, diced
• 1 yellow pepper, diced
• 1 red onion, diced
• 2 cloves garlic, diced
• 1 tsp red pepper flakes
• 1 tsp cumin
• 2 tsp oregano
• 1 tbsp chili powder (feel free to add more to taste)
• 1/2 tsp cayenne pepper
• 28 oz. canned diced tomatoes
• 5.5 oz. tomato paste
• 2 cups chicken broth
• 1 cup frozen corn (leave out for low carb)
• 2 bay leaves
• 1/4 cup buffalo sauce (Frank's hot sauce)
• Brown your ground chicken in a large pan on the stove.
• Place all ingredients in crockpot and cook on high for 4 hours or low 7-8 hours, stirring a few times if possible.
• Makes 12- 1 cup servings, will freeze well.

ZERO POINTS Lazy Lentil Crock Pot Soup
8 Cups of vegetable broth (I use low sodium)
• 1 Pound of dried lentils, rinsed and drained
• 1 Cup of chopped cauliflower
• 3 Large carrots, peeled and sliced into rounds
• 1 Medium onion (any color) chopped
• 2 Large celery stalks, chopped
• 1 Can of diced tomatoes (14.5 ounces) keep the juice!
• 1.5 Cups of hot water
• 1 Tablespoon of red wine vinegar (or red wine)
INSTRUCTIONS:
• Put everything in the crock pot (except the celery and cauliflower) and stir
• Cook for about 4 hours on low
• Add the celery and cauliflower
• Turn the crock pot to high and cook another 30 minute

ZERO POINT • Creamy Crock Pot Chicken
• 1 Pound of boneless, skinless chicken breasts, cut into bite sized pieces
• 1 Cup of coconut milk, no sugar added (you could use almond milk as well)
• 1 Cup of non-fat plain Greek yogurt
• 1/2 Cup of fat free sour cream
• 2.5 Tablespoon of butter buds
• 1 Cup of no sugar added tomato sauce
• 1 Medium diced tomato
• 1 Small onion, diced (I used red onion, but you can use any color)
• 2 Cloves of garlic, minced
• 1 Teaspoon of cumin
• 1 Teaspoon of ginger
• 1/2 Teaspoon of chili powder (optional)
• 1 Teaspoon of salt
• 1 Lemon, juiced---------
• Place the chicken in the bottom of the crock pot
• Top with the onion, garlic, tomato, and spices
• Pour everything else over the top
• Stir well
• Cook on high for 3 hours
• Stir once and lower heat to low
• Cook for another 30 to 60 minutes
Most people would serve this with rice, but I used cauliflower rice and made a side
salad as well
