WW Brilliant Fruit Salad 2 SP 10 servings                VERY GOOD                                                                                   
1/3 c sugar                                                                                                                                                                                 3/4 c water                                                                                                                                                                              1/2 vanilla bean split lengthwise                                                                                                                                  
1 lemon                                                                                                                                                                                  4 lg clementines, peeled and separated into segments                                                                                                           
3 c diced pineapple                                                                                                                                                             
 3 kiwi, peeled and diced                                                                                                                                                   
1 c pomegranate seeds                                                                                                                                                        
6 basil leaves or mint leaves cut into strips (opt)                                                                                                              
1. Combine sugar and water in med. saucepan. Scrape seeds from bean and add to pan. Add pod to pan. 2. Using peeler, remove lemon zest in strips, avoiding as much white pith as possible; add zest to pan with 1 T lemon juice. Bring mixture to boil over high heat; reduce to medium and immer, uncovered, until mixture thickens slicghtly, about 5 minutes. Remove syrup from heat; refrigetate until cool. 3. Place fruit and seeds in bowl Remove zest from syrup; pour syrup over fruit and toss to coat. Cover; refrigerate at least 30 minutes or up to one day.

Strawberry Cheesecake Salad


15 mins to make, serves 8-10                                                                                                                                    
1 box (3.4 oz.) cheesecake   or    white choc pudding mix
12 oz whipped topping
3 (6 oz) containers strawberry yogurt
1 lb fresh strawberries, sliced
3 bananas, sliced (add just before serving or they brown)
3 cups miniature marshmallows (opt)

1) Place the whipped topping, pudding mix and yogurt into a large bowl. Whisk together.     
2) Cover and refrigerate until just before serving (at least an hour).
3) When you are ready to serve, slice the strawberries and bananas.
4) Remove whipped cream/pudding mixture from refrigerator and gently fold in strawberries, bananas and marshmallows, and stir gently to combine.
    Serve immediately

In my opinion: DELICIOUS.

•1 fresh ripe cantaloupe
•4 fresh ripe mangoes
•2 pounds of fresh strawberries
•4 cups of seedless green grapes
•1 1/2 cups of fresh blueberries
•3 to 5 cups powdered sugar
