WW Sesame Chicken and Boccoli Stir Fry serv 4 4 SP

3Tbspsoy sauce
2Tbspketchup
4tspdark brown sugar
2 tsp sambal oelek or Asian chili sauce
2tspcornstarch
2tspsesame oil
1Tbspminced garlic
1Tbspminced ginger
12ozfrozen chopped broccoli
1cup(s)reduced-sodium chicken broth
1⁄2cup(s)uncooked scallion(s), sliced
Cook chicken breasts according to package instructions. Dice and reserve.
In a small bowl, whisk together soy sauce, 2 tsp. corn starch, ketchup, brown sugar, and sambal oelek and reserve.
Heat sesame oil in a large non-stick skillet or wok over medium heat.
Add garlic and ginger and cook for 1 minute. Add broccoli and toss to coat.
Pour chicken broth over broccoli, raise heat, cover and cook for 5 minutes or until broccoli is crisp-tender.
Stir in chicken and reserved sauce and simmer for 3 minutes or until thick.

CP (Make ahead and freeze) Chicken Teriyaki Stir Fry
3 boneless, skinless chicken breasts, diced
½ cup teriyaki sauce
½ cup chicken broth
1/3 cup brown sugar
¼ cup soy sauce
4 cloves garlic, minced
1 teaspoon sesame oil
16 oz. bag of stir fry blend vegetables
2 cups rice
Combine ingredients in a ziplock bag. When ready to cook, place in slow cooker and cook on low for 6 hours. Serve over cooked rice.
