Roasted Garlic-Herb Bread
1 head garlic
¼ c grated Parmesan cheese
¾ t dried Italian seasoning
½ (12 oz) whole-grain or whole-wheat baguette, sliced lengthwise in half
1. Preheat oven to 375.
2. Cut head of garlic crosswise in half. Lightly spray all over with olive oil nonstick spray and tightly wrap in sheet of foil. Place foil package directly on oven rack and roast until garlic is very tender when squeezed, about 1 hour.
3. When cool enough to handle, unwrap garlic and squeeze out pulp from each clove into small bowl. Add aParmesan and Italian seasoning, mashing mixture with fork until smooth and combined.
4. Preheat broiler.
5. Spread garlic-Parm mixture over cut sides of bread. Place bread, cut-side up, on broiler rack and broil about 5” from heat until browned in spots and heated through, about 2 minutes. Cut bread into 12 pieces.

WW Carrot loaf with cream cheese icing

2 eggs
2 Tbsp brown sugar
⅓ cup non fat plain greek yogurt
½ cup apple sauce
1 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
1.5 cups flour
1 tsp baking powder
1 tsp baking soda
2 cup shredded carrots
FOR THE ICING
¼ cup softened light cream cheese
¼ cup icing sugar (confectionary sugar, white powdered sugar)
½ Tbsp light butter, soft
½ tsp vanilla
Top loaf with ¼ cup chopped walnuts *optional
Preheat oven to 375F, spray a regular sized loaf pan.
In a bowl whisk together your eggs and brown sugar
Stir in yogurt, applesauce and vanilla
Mix in your flour, baking powder, soda and spices.
Fold in carrots, I used a food processor for carrots
Pour batter into loaf pan and bake in the oven for 45-50 minutes, until baked all through.
Let cool before removing from pan.
To make icing mix your cream cheese, icing sugar, butter and vanilla together until creamy, you can do this while loaf is baking and then store in fridge till ready to ice loaf. Spread icing on then sprinkle with walnuts, makes 10 slices.
*Icing and walnuts are optional, loaf with no icing or nuts is 2SP per serving, just icing is 3SP and icing and nuts is 4SP, also note this is a dense carrot loaf due to ingredients used, it might sink slightly once it has cooled down.
Store in fridge, loaf will freeze well.

-Mix all together and bake in 3x6 mini loaf pan;
-350 degrees for 30 minutes
She added cinnamon and cocoa powder for extra flavor. 2 points for entire pan.

Downeast Maine Pumpkin Bread
15 oz can pumpkin puree
4 eggs
1 c vegetable oil
2/3 c water
3 c sugar
3 1/2 c all-purpose flour
2 t baking soda
1 1/2 t salt
1 t ground cinnamon
1 t ground nutmeg
1/2 t ground cloves
1/4 t ground ginger
1. Preheat oven to 350. Grease and flour 3 7x2" loaf pans.
2. In a large bowl, mix together pumpkin through sugar until well blended. In a separate bowl, whisk together the flour through ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into prepared pans.
3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
In my opinion: This bread was so moist and delicious. I only wish I had made it sooner.

Resurrection Rolls (Empty Tomb Rolls)


Ressurrection "Empty Tomb" Rolls by Catholic Icing Canned Crescent Rolls Small bowl of melted butter Small bowl of Cinnamon/Sugar Mixture Large Marshmallows **Before beginning, melt your butter, preheat your oven to the temperature on your crescent roll can, and cover your pan in parchment paper or aluminum foil, because the melted marshmallows can get messy!
1. Give each child a marshmallow, and tell them it represents Jesus. Have them dip it into the melted butter, and then roll it in the cinnamon sugar. These represent the oil and spices used to prepare Jesus' body for burial. 2. Now give each child a crescent roll, and have them wrap up the marshmallow tightly, pinching it closed as much as possible. The roll represents the linen cloths that Jesus' body was wrapped in. 3. Place your rolls into the oven, which symbolizes the tomb. Bake according to package directions, and pretend it has been 3 days! ;-) 4. an "empty tomb". Isn't that cool?! Jesus has risen! Alleluia, Alleluia! :-)

Heart Shaped Breadsticks by Pillsbury

1can (11 oz) Pillsbury® refrigerated breadsticks
1egg, slightly beaten
1/4cup finely crushed nacho-flavored tortilla chips
1. Heat oven to 375°F. Separate dough into 12 breadsticks; stretch each until 12 inches long. Twist and shape each breadstick into heart shape; place on ungreased large cookie sheet.
2. Brush breadsticks with beaten egg; sprinkle with crushed chips.
3. Bake 10 to 13 minutes or until golden brown. Serve warm..

Breadstick Bones by Pillsbury
can of Pillsbury garlic breadsticks
pizza sauce for dipping
Creamy Italian dressing for dipping
1. Preheat oven to 350.
2. Open can of breadsticks. Roll out on baking sheet and cut in half, horizontally, making 16 sticks.
3. Pick up one breadstick, stretch out the ends so the dough will be thinner and cook evenly. Tie each end in a knot. Place on baking sheet.
4. Follow can directions for baking.
5. Serve with desired sauces.
In my opinion: These were a huge hit with my kids. I chose the Creamy Italian dressing because I used to work in a family run Italian restuarant and they served Creamy Italian with their breadsticks. Yummy!

Macaroni Grill Foccacia Bread (by thatsmyhome.com)
3 c unsifted, all-purpose flour
3/4 c unsifted semolina flour
1/2 t salt, divided
1 1/2 T quick-rising yeast (2 pkgs)
1 1/2 c hot (120-130 degrees) milk
1 T fresh rosemary leaves
1. Pour a scant of a T of the olive oil into a 9" square cake pan; spread evenly to cover bottom and sides.
2. Place all-purpose flour, semolina flour, 2T of the olive oil, 1/4 t of salt, and all yeastin the bowl of a mixer fitted with a dough hook (the mixing can be done by hand as well).
3. Blend ingredients on medium speed. Reduce speed to low and slowly add hot milk. Raise the speed to medium and continue mixing for 5 minutes (knead 8-10 minutes by hand).
4.Sprinkle bottom of cake pan with a little flour. Remove dough from bowl and spread out evenly in pan. Cover with a towel and let rest for 30 minutes. Preheat oven to 400°F.
5. Remove towel. Brush dough with 1 to 2 tablespoons of the olive oil. Sprinkle top with additional salt and rosemary. Bake for 20 minutes. Remove from oven and drizzle with remaining oil.
6-8 servings
In my opinion: I can't describe in words how good this bread is. I made my own rosemary oil to dip it in and we can't keep this around the house. To me it is as close to Macaroni Grill's bread as it gets.
