Pumpkin Chex


9 cups rice chex cereal
1 bag of pumpkin Hershey Kisses                                                                              
1 1/2 cups of powdered sugar


 
1. First, prep your powdered sugar and cereal.
 
2. Second, using a double broiler method, melt your Hershey Kisses, stirring constantly. The kisses will reach a nice creamy consistency.


 
3. Pour your melted kisses over your cereal in a bowl and mix and stir.
 
4. Once you feel your chex are covered, dump into a bag with your powdered sugar and shake. I just stirred.


In my opinion: These were good, but would have been better with more kisses or less Chex.

Valentine Chex Mix by Betty Crocker

1/2 recipe

4 1/2 cups Rice Chex® cereal
1/2 cup white vanilla baking chips
1/4 cup peanut butter
2 tablespoons butter or margarine
1/3 cup powdered sugar
1/4 cup red, white and pink candy-coated chocolate candies
2 tablespoons red or pink jimmies sprinkles

1.Place cereal in medium bowl. In small microwavable bowl, microwave vanilla chips, peanut butter and butter uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Pour peanut butter mixture over cereal, stirring until evenly coated.
2.Place 1/2 of the cereal mixture in 1-gallon food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper or foil; cool about 15 minutes.
3.Meanwhile, stir candies and sprinkles into remaining cereal mixture. Spread on waxed paper or foil; cool about 15 minutes.
4.In serving bowl, mix both cereal mixtures. Store in airtight container.


In my opinion: This was quick and easy or I would not have had time to make it with 4 small kids and an elderly father to take care of. It is super yummy!

Pumpkin Pie Crunch Chex


1/4 cup brown sugar
1 tablespoon pumpkin pie spice
1/4 cup butter
2 teaspoons vanilla
2 cups Cinnamon Chex® cereal
2 cups Wheat Chex® cereal
2 cups Honey Nut Chex® cereal
8 oz pecans


1.In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated.
2.Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container.
16 servings (1/2 cup each)

In my opinion: I love pumpkin flavored food, and I love Chex mix so these made a fabulous combination. I would like a little more pumpkin flavor so next time I might try adding some pumpkin puree.

Snickerdoodle Chex Mix

The original recipe is posted here, but we didn't think much of the popcorn in the mix, and my husband doesn't like chocolate (I know, weird), so we created our own recipe:

1/4 cup sugar
1 teaspoon ground cinnamon
4 cups Cinnamon Chex® cereal
2 cups Honey Chex
1/2 c pecans or almond halves
1/4 cup butter or margarine

The cinnamon and sugar mixture blends in more evenly when it's sprinkled on the cereal mixture a half at a time.

1. In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and nuts.
2. In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.
3. Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.

In my opinion: I really liked these! There are so many new flavors to choose from, I can't wait to try them all.

Buffalo Chex Mix

not to be confused with my Spicy Chex Mix

1 stick butter
2 1/2 T hot wing sauce
1 packet Ranch dressing
2 c Parmesan Cheese Crackers such as Cheese-Its
2 c pretzels
5 c Rice Chex
5 c Corn Chex

1. Preheat oven to 250.
2. Melt butter in large roasting pan. Add hot wing sauce
3. Sprinkle in Ranch seasoning and mix well.
4. Add the rest of the ingredients and stir to coat well.
5. Bake at 250 for one hour, stirring every 15 minutes.

In my opinion: These were good! My husband and I still prefer my spicy recipe, but we ate half the batch in one day, so we obviously liked them.

My Spicy Chex Mix

My Spicy Chex Mix   (Double recipe is at the bottom)

1 stick butter
2 T Worcestershire Sauce
1 T Tobasco Sauce
1/2-3/4 T garlic salt (or to taste) **
1 t cayenne pepper (or to taste) **
6 c Rice Chex (1/2  12 oz box)
6 c Corn Chex (1/2 12 oz box)
1 c mixed nuts
1 c pretzels
1 c Cheerios *optional

1. Preheat oven to 250 with butter in a roasting pan in the oven.
2. Once butter is melted, add Worcestershire and Tobasco. Stir.
3. Sprinkle with garlic salt & cayenne pepper
4. Add remaining ingredients and mix well.
5. Bake one hour, turning every 15 minutes.

If you are doubling this recipe, it is easier to buy the 12 oz boxes:
2 sticks butter
4 T Worcestershire Sauce
2 T Tobasco Sauce
1-1/12 T garlic salt ( or to taste)
2 t cayenne (or to taste)
2 c mixed nuts
2 c pretzels
2 c Cheerios*

I like to melt the butter in a glass measuring cup with a spout. Then I add the sauces and seasonings, stir WELL, and drizzle over the top, stir, drizzle, stir, etc.... until the butter mixture is gone and the cereal, nuts, and pretzels are evenly coated.


In my opinion: There is no other Chex Mix. This is the best, but not for the weak. We like heat in our family and might even try 1 1/2 t cayenne next time.
