WW Brilliant Fruit Salad 2 SP 10 servings                VERY GOOD                                                                                   
1/3 c sugar                                                                                                                                                                                 3/4 c water                                                                                                                                                                              1/2 vanilla bean split lengthwise                                                                                                                                  
1 lemon                                                                                                                                                                                  4 lg clementines, peeled and separated into segments                                                                                                           
3 c diced pineapple                                                                                                                                                             
 3 kiwi, peeled and diced                                                                                                                                                   
1 c pomegranate seeds                                                                                                                                                        
6 basil leaves or mint leaves cut into strips (opt)                                                                                                              
1. Combine sugar and water in med. saucepan. Scrape seeds from bean and add to pan. Add pod to pan. 2. Using peeler, remove lemon zest in strips, avoiding as much white pith as possible; add zest to pan with 1 T lemon juice. Bring mixture to boil over high heat; reduce to medium and immer, uncovered, until mixture thickens slicghtly, about 5 minutes. Remove syrup from heat; refrigetate until cool. 3. Place fruit and seeds in bowl Remove zest from syrup; pour syrup over fruit and toss to coat. Cover; refrigerate at least 30 minutes or up to one day.
