1 Very ripe banana, well mashed
• 2 Eggs
• 1/4 teaspoon of cinnamon
• 1/8 teaspoon of salt
INSTRUCTIONS:
• Preheat a skillet or griddle over medium heat
• In a small bowl, mash the banana
• In another small bowl, whisk the eggs, cinnamon, and salt
• Mix the banana into the egg mixture and whisk everything until smooth
Spray the griddle with a zero calorie cooking spray (butter flavored sprays are
good)
• Pour two pancakes onto griddle. Flip after bubble appear on the edges
