ZERO POINTS Cauliflower Fried Rice & Veggies


1 Package of frozen cauliflower “rice” (12 ounce package)
• 8 Ounce package of mixed frozen veggies
• 4 Tablespoon of no sugar added teriyaki sauce (Annie Chun is a good brand)
• 1 Tablespoon of minced garlic
• 4 Eggs, whisked together
• Salt and pepper to taste


• Spray a frying pan with a zero calorie cooking spray and set flame to medium
high
• Add in the veggies and garlic, stirring regularly
• Add cauliflower rice and spray again
• Add in half of the teriyaki sauce and cook for 5 to 7 minutes
• Make a hole in the center of the rice and add the eggs to the center
• Let the eggs cook about half way, then mix with the rice mixture
• Cook another 10 minutes or so, until the eggs are thoroughly cooked
• Serve hot
I really liked this cauliflower rice version. There was some left over, so I reheated it in
the microwave and ate a little later in the evening. You could even add some cooked
chicken to this.
