Lemon Pepper Vegetables

 – 1 Smart Point                                                                                                               
veg1 Tbsp olive oil
1 small red onion chopped
1 medium zucchini sliced
1 large yellow bell pepper chopped
2 tomatoes chopped
1 tsp lemon pepper
1 tsp dried oregano
1 tsp dried parsley
1/2 tsp garlic powder
Salt to taste
Over medium high heat, heat the olive oil in a large skillet.
Sauté the onion for 2 minutes.
Add the zucchini and sauté for another 2-3 minutes.
Add the bell peppers and tomatoes.
Continue to cook until the vegetables are hot and beginning to get tender.
Add the seasonings, and adjust to taste as necessary.
Mix well and serve hot.
